This puffed apple pancake will get everyone out of bed in the morning. And it’s easy to make. In the morning, that’s good for me!

Equipment
- 1 oven-safe 9-inch skillet
- 1 electric hand mixer
Ingredients
- ¼ cup Butter
- ¼ cup Brown sugar
- ½ tsp Ground cinnamon
- 2 Apples cored and cut into ¼-inch slices
- 3 Large eggs
- ¾ cup Milk
- ½ tsp Salt
- ½ tsp Baking powder
- ¾ cup All-purpose flour
Instructions
- Preheat oven to 425°F.
- Melt butter in an oven-safe 9-inch skillet on the stove top. Work melted butter up the sides of the skillet. To prevent the food from sticking, make sure the skillet is hot before adding other ingredients.
- Reduce heat and stir brown sugar into butter.
- Lay apple slices in the bottom of the skillet, overlapping them a little.
- Sprinkle apples with cinnamon.
- Remove skillet from heat.
- In a medium bowl, beat the eggs until frothy.
- Add remaining ingredients and stir to moisten. There may be a few lumps.
- Pour the mixture over the apples. The apples will move around a little. That’s okay.
- Bake at 425°F for 25 minutes.
- Cut into wedges and serve with a drizzle of maple syrup.
