Bean Salad
A colourful and tasty addition to any salad bar. Make a few days ahead to allow it time to marinate.

Ingredients
- 1 cup Granulated sugar
- ½ tsp Dry mustard
- ½ tsp Salt
- ½ tsp Pepper
- 1 cup White vinegar
- 2 tbsp Vegetable oil
- 1 can Cut green beans
- 1 can Cut yellow beans
- 1 can Kidney beans
- 1 can Chickpeas
- 1 cup Onion diced
- 1 cup Celery chopped
- 1 Red bell pepper diced
Instructions
- Combine sugar, dry mustard, salt and pepper in a small bowl.
- Add vinegar and oil. Stir and let sit a few minutes to dissolve sugar.
- Meanwhile, drain and rinse green beans, yellow beans, kidney beans and chickpeas. Place in a large bowl.
- Add prepared onion, celery and red pepper. Stir to combine.
- Pour dressing over salad. Cover and refrigerate.
- Let stand at least 24 hours before serving.
- Will keep for a few weeks.
- Serve with a slotted spoon.
