Bean Soup

A bowl full of hearty bean soup with hot biscuits on the side.

This colourful and hearty bean soup is full of flavour and nutrients – comfort food at its best! It also puts a leftover ham bone to good use.

Equipment

  • 1 stock pot
  • 1 Colander

Ingredients

  • 450g pkg Dry bean mix
  • Water to cover
  • 8 cups Water
  • 1 Ham bone
  • 2 cups Ham cut into cubes (optional)
  • 1 can Tomatoes diced
  • 1 cup Tomato sauce
  • 1 Large onion chopped
  • 1 Green pepper diced
  • 1 Garlic clove minced
  • ½ tbsp Chili powder
  • 2 tbsp Lemon juice
  • ¼ – ½ tsp Black pepper to taste
  • Salt to taste
  • dash Cayenne pepper to taste

Instructions

Night before

  • Rinse dry bean mix thoroughly and place in a large, stainless steel pot.
  • Add water so there is about three inches of water above the beans.
  • Cover with lid and soak overnight.

In the morning

  • Drain the beans into a colander and rinse well.
  • Return to the pot and add eight cups of water. Stir the beans. If the water gets “muddy”, drain the beans in the colander and rinse again. Then return to the pot and add another eight cups of water.
  • Bring to a boil, stirring occasionally. Allow to boil for a couple minutes and skim off the foam.
  • Add the ham bone.
  • Reduce heat to low and simmer for three hours, until beans are tender.
  • Remove the ham bone.
  • If you have leftover ham, cut into cubes to make about two cups and add to the soup at this point.
  • Add remaining ingredients and simmer for another hour or two until vegetables are tender and flavours are blended.
  • Keep in mind the ham will add saltiness to the soup, so be sure to taste test before adding more salt.
  • Serve with hot biscuits.
