Make perfectly tender steak at home any time of the year with these simple instructions. Use a cast iron skillet for best results.

Equipment

  • 1 cast iron skillet

Ingredients

  • Your favourite grilling steaks. Look for steak with a lot of marbling.
  • Salt
  • Seasoning – try a cracked pepper medley.
  • 2 tbsp Cooking oil
  • 2 tbsp Butter
  • 1 tsp Minced garlic optional

Instructions

  • Sprinkle steak with salt and desired seasoning.
  • Let steak sit at room temperature for at least 30 minutes to get the chill out of it.
  • Place a cast iron skillet on a burner and turn to medium-high heat. Add two tablespoons of oil. Let the skillet get nice and hot.
  • Cast iron is the best way to cook steak. It distributes the heat evenly and the steak has full contact with the skillet for optimal searing, caramelizing the sugars and browning the proteins perfectly.
  • Place steak in the skillet. Reduce heat to medium. Cover with a spatter screen.
  • For a 1-inch-thick steak, cook four minutes on each side for medium-rare.
  • When turning the steak, if it sticks to the skillet, it is not ready to turn. The steak will lift from the skillet easily when it’s done on that side. This is a general rule for searing any kind of meat.
  • When the steak is almost done on the second side, melt two tablespoons of butter in the skillet. Then baste the steak with the butter. Try adding minced garlic to the butter for added flavour.
  • I usually turn the steak one more time and cook another 2 minutes, especially if a lot of red juices come to the surface.
  • Let the steak rest on a plate for a few minutes before you cut into it. This allows the meat to relax and prevents all the juice from running out it.
