Blueberry Bran Muffins

These flavourful muffins are full of nutritious and energizing ingredients. A great way to start your day.

Equipment

  • 1 Muffin tin
  • 12 Paper liners
  • 1 Electric mixer

Ingredients

  • 1 cup Buttermilk*
  • 1 cup Bran
  • 1 cup All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • ½ tsp Salt
  • 1 cup Blueberries fresh or frozen
  • 1/3 cup Cooking oil
  • 3 tbsp Fancy molasses
  • 1 Egg
  • ¼ cup Brown sugar packed
  • ½ tsp Vanilla

Instructions

  • Preheat oven to 375°F.
  • Prepare muffin pan (grease or line cups).
  • In a small mixing bowl, stir buttermilk and bran together. Let stand 5 minutes.
  • Meanwhile, combine flour, baking powder, baking soda and salt in a large mixing bowl. Stir in blueberries. Make a well in the center.
  • Beat remaining ingredients together.
  • Add the bran mixture and stir.
  • Pour mixture into well of dry ingredients and stir just to moisten.
  • Fill muffin cups ¾ full.
  • Bake at 375°F for 20-25 minutes.
  • Let stand for 5 minutes before removing from pan to cool completely.

Notes

* To make buttermilk, put 1 tbsp of vinegar or lemon juice in a 1-cup liquid measure then add milk to measure a total of 1 cup. Stir and let sit for a few minutes.
