Blueberry Bran Muffins
These flavourful muffins are full of nutritious and energizing ingredients. A great way to start your day.

- 1 Muffin tin
- 12 Paper liners
- 1 Electric mixer
Ingredients
- 1 cup Buttermilk*
- 1 cup Bran
- 1 cup All-purpose flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- ½ tsp Salt
- 1 cup Blueberries fresh or frozen
- 1/3 cup Cooking oil
- 3 tbsp Fancy molasses
- 1 Egg
- ¼ cup Brown sugar packed
- ½ tsp Vanilla
Instructions
- Preheat oven to 375°F.
- Prepare muffin pan (grease or line cups).
- In a small mixing bowl, stir buttermilk and bran together. Let stand 5 minutes.
- Meanwhile, combine flour, baking powder, baking soda and salt in a large mixing bowl. Stir in blueberries. Make a well in the center.
- Beat remaining ingredients together.
- Add the bran mixture and stir.
- Pour mixture into well of dry ingredients and stir just to moisten.
- Fill muffin cups ¾ full.
- Bake at 375°F for 20-25 minutes.
- Let stand for 5 minutes before removing from pan to cool completely.
Notes
* To make buttermilk, put 1 tbsp of vinegar or lemon juice in a 1-cup liquid measure then add milk to measure a total of 1 cup. Stir and let sit for a few minutes.
