Bruschetta

Who doesn’t enjoy bruschetta? Toasted baguette topped with seasoned fresh tomatoes and melted mozza. Mmmmm! It’s a popular appetizer. And it comes together quickly. The topping can be prepared 2-3 days ahead.

Who doesn’t enjoy bruschetta? This recipe comes together quickly. The topping can be prepared 2-3 days ahead.

Equipment

  • 1 baking sheet

Ingredients

  • 2 cups Tomatoes seeded and diced
  • 2 cloves Garlic minced or ½ tsp garlic powder
  • 1/3 cup Olive oil
  • 1 tsp Italian seasoning
  • 1 tsp Dried basil
  • ½ tsp Salt
  • ¼ tsp Ground pepper
  • ½ cup Mozzarella cheese grated
  • 1 Baguette

Instructions

  • Combine first seven ingredients in a bowl. Cover and let stand for at least one hour so flavours blend.
  • Cut baguette on the angle into ¾ inch slices and place on a cookie sheet.
  • Stir ½ of mozzarella into the tomato mixture and spoon onto baguette slices.
  • Sprinkle remaining mozzarella on top.
  • Place under broiler until cheese is melted and bread edges are toasted.
  • Serve immediately.
