Mom’s Butter Tarts

These are the best butter tarts. A family recipe my mom always makes for special occasions, especially Christmas.

Makes 12 tarts.

Butter Tarts

INGREDIENTS:

1                                  Egg, well beaten

1/3 cup                      Butter, softened

1 cup                          Brown sugar, packed

2 tbsp                        Milk

2 tbsp                        Corn syrup

1 tsp                           Vanilla

¼ cup                         Raisins or currents (optional)

¼ cup                         Chopped pecans (optional)

12                               Tart shells

Time saving tip: Pre-made tart shells save a lot of time with this recipe!

DIRECTIONS:

  • Preheat oven to 400° F.
  • Beat egg in a medium mixing bowl.
  • Add butter, brown sugar, milk, corn syrup, and vanilla and mix well. 
  • Stir in raisins and nuts. You may choose to add only raisins or only nuts. If so, add 1/2 cup of one or the other.
  • Fill each tart shell about 3/4 full.  If you are using pre-made shells, place on a parchment lined cookie sheet with edges.
  • Bake for 15-20 minutes.
  • Cool completely and store in an airtight container, separating layers with parchment paper.
  • These freeze well.
