
Chocolate covered peanut butter balls are a classic Christmas treat. Here is my mom’s recipe that we all enjoy year after year. Make ahead and freeze.
INGREDIENTS:
1 cup Confectioner’s (icing or powdered) sugar
1 cup Peanut butter
1 cup Chopped walnut or pecans
1 cup Crisp rice cereal
2 tbsp Butter, melted
6 oz Semi-sweet chocolate
1/2 square Parowax (optional, to keep the chocolate from getting too soft at room temperature)
DIRECTIONS:
- Mix first five ingredients.
- Using wet hands, roll into 3/4 – 1 inch balls. I like small, bite-size balls because there are so many different treats around at Christmastime.
- Place on a lined cookie sheet with edges and put in freezer for one hour.
- Melt chocolate and Parowax in a double boiler. Or you can melt the chocolate in a microwave and keep the bowl over hot water. But the microwave heats unevenly so be careful not to burn it.
- Line a cookie sheet with parchment paper or wax paper.
- Dip balls into melted chocolate and cover completely by rolling with a fork.
- Place on lined cookie sheet.
- Refrigerate or freeze until chocolate is hard.
- Transfer to an airtight container separating layers with parchment paper.
- Store in refrigerator or freeze.
