This is my version of a recipe I found in a Gooseberry Patch recipe book. A soft, smooth fudge that melts in your mouth and makes you ask for more!
Ingredients:
½ cup butter
12-oz package semisweet chocolate chips
¼ tsp salt
2 8-oz packages cream cheese, room temperature
2 16-oz packages of icing or powdered sugar (this is about 1 kg minus 1 cup)
1 tsp vanilla
1 cup walnuts
Directions:
Line 9×13 pan with greased parchment paper.
Place butter, chocolate chips and salt in large microwave safe bowl.
Microwave for 3-4 minutes; stir. (I do not usually use the microwave for cooking or baking, but this method does work nicely. Using a double boiler would work as well, but I have not tried it yet so I don’t know cooking times.)
Add cream cheese. Microwave 1 more minute.
Beat well with electric mixer on medium speed. Slowly add icing sugar, beating between each addition. Add in vanilla. Continue beating until fudge starts to thicken.
Pour into prepared pan. Chill until firm.
Lift fudge out of pan with edges of parchment paper and place on cutting board. Cut into bite-size squares. Store in air tight container in refrigerator.
