Ginger Cookies

When I moved to the Maritimes in 2002, I initially landed in Saint John, NB.  There I stopped at the Crosby Molasses Company and picked up a free copy of “Crosby’s Molasses Family Favourites” recipe book.  In it I found the most delicious ginger cookie recipe. This recipe won me a first place ribbon at the Kensington Community Harvest Festival!

INGREDIENTS:

¾ cup                         Shortening

1 cup                          Granulated sugar

1                                  Egg

4 tbsp                         Fancy Molasses

2 cups                        All-purpose flour

2 tsp                           Baking soda

1 tsp                           Ground cinnamon

1 tsp                           Ground cloves

2 tsp                           Ground ginger

½ tsp                          Salt

DIRECTIONS:

  • Cream shortening. 
  • Add sugar, egg, and fancy molasses. 
  • Add dry ingredients and mix well.
  • Roll into 1-inch balls, then roll in sugar and place on ungreased cookie sheet.
  • Press down with a lightly floured fork to half an inch thick.
  • Bake at 375° F for 8-10 minutes.
  • Let rest on cookie sheet for a couple minutes before transferring to a wire rack to cool.
