I never used to eat Caesar salad because I didn’t like the hard, store-bought croutons. And when I got wise to looking at the ingredients of processed food, I became even more convinced that I didn’t want to eat them.
Then I started cooking for my husband who LOVES Caesar salad and I decided to try making the croutons myself.
DIRECTIONS:
- Cut 1 or 2 slices of bread into small cubes. I collect the ends of bread in the freezer until I have enough to make into breadcrumbs or cubes for stuffing, so I just use a couple of these.
- Put them in a glass baking dish, single layer.
- Drizzle olive oil over them. Herb infused olive oil adds a nice flavour. Stir to coat the bread lightly.
- Broil them in the oven until they get toasty, stirring them once or twice so they toast evenly. During this stage, I have been known to forget about them as I get the rest of supper ready. Now I set a timer for a few minutes, so I don’t forget to check on them!
- Let cool a little before adding them to the salad.

Now I enjoy Caesar salad too.
