Ready in 45 minutes, this is a perfect weekday meal. Spice it up a bit with spicy Italian sausage.

Ingredients
- 4 Italian sausages
- Olive oil
- 1 Onion diced
- 1 Garlic clove minced
- 1 cup Mushrooms quartered
- 1 Red bell pepper cut into large pieces
- 3 cups Your favourite seasoned tomato sauce
- ½ cup Water
- Dash Cayenne pepper optional
- 2 cups Dry penne
Instructions
Sauce
- Heat oil in heavy pot. I use my cast iron pot for this recipe.
- Add sausages and cook while preparing vegetables.
- Remove sausages and drain off excess fat.
- Add vegetables to pot and allow to soften.
- Slice sausages on an angle, then add back to the pot.
- Add tomato sauce, water and additional seasoning, if desired.
- Reduce heat and allow to simmer while pasta is cooking.
Pasta
- Bring about 6 cups of water with 1 tsp of salt to a boil in large pot.
- Add dry penne and stir for a minute so it doesn’t stick to the bottom.
- Reduce heat to medium and continue boiling until just tender.
- Drain pasta and stir into sauce.
- Serve with a sprinkle of parmesan cheese and a salad on the side.
