Dress up your carrots with this tangy marinade. An excellent addition to any meal. Allow to marinate a few hours or overnight.

Ingredients

  • ½ pound Baby carrots or sliced carrots
  • ¼ cup Onion finely chopped
  • ¼ cup Red bell pepper finely chopped
  • ½ cup Tomato sauce
  • 1 tbsp Granulated sugar
  • 2 tbsp Cider vinegar
  • 1 tbsp Olive oil
  • ½ tsp Worcestershire sauce
  • ¼ tsp Salt
  • ¼ tsp Ground black pepper

Instructions

  • In a saucepan, cover carrots with water. Add ½ tsp salt. Bring to a boil. Reduce heat and simmer for 8-10 minutes until tender crisp.
  • Meanwhile combine remaining ingredients in a bowl.
  • Rinse carrots with cold water and drain.
  • Add carrots to bowl and stir to coat.
  • Cover and refrigerate for a few hours or overnight.
