
You can’t go wrong adding this favourite no bake cookie to your treat tray. And it’s so quick and easy to make! For Christmas I rolled the mounds into balls for a different presentation.
Makes two dozen.
INGREDIENTS:
¼ cup Butter
¾ cup Granulated sugar
3 tbsp Cocoa powder
¼ cup Milk
2 tbsp Corn syrup
1 tsp Vanilla
1 ½ cups Regular rolled oats *
½ cup Coconut
¼ cup Walnuts or pecans
DIRECTIONS:
- Melt butter on medium heat in a heavy saucepan.
- Add sugar and stir until dissolved.
- Stir in cocoa powder, then add in the milk.
- Cook over medium heat until mixture comes to a boil.
- Add corn syrup and vanilla.
- Return to a rolling boil and cook, stirring constantly, until mixture starts to clean off the sides of the pot (about 3-5 minutes).
- Remove from heat and add oats, coconut, and nuts.
- Mix well.
- Drop by teaspoonfuls onto wax paper.
- Cool completely.
- Store in an airtight container with wax paper between layers.


* It is better to use regular rolled oats when baking. Quick or instant oats have been pre-cooked and absorb moisture faster, so whatever you are making may turn out dry or crumbly.
