No Bake Spider Cookies

You can’t go wrong adding this favourite no bake cookie to your treat tray. They’re so quick and easy to make and you don’t have to turn on your oven!

Equipment

  • 1 medium sauce pan

Ingredients

  • ¼ cup Butter
  • ¾ cup Granulated sugar
  • 3 tbsp Cocoa powder
  • ¼ cup Milk
  • 2 tbsp Corn syrup
  • 1 tsp Vanilla
  • 1 ½ cups Regular rolled oats *
  • ½ cup Coconut
  • ¼ cup Walnuts or pecans

Instructions

  • Melt butter on medium heat in a heavy saucepan.
  • Add sugar and stir until dissolved.
  • Stir in cocoa powder, then add in the milk.
  • Cook over medium heat until mixture comes to a boil.
  • Add corn syrup and vanilla.
  • Return to a rolling boil and cook, stirring constantly, until mixture starts to clean off the sides of the pot (about 3-5 minutes).
  • Remove from heat and add oats, coconut, and nuts.
  • Mix well.
  • Drop by teaspoonfuls onto wax paper.
  • Cool completely.
  • Store in an airtight container with wax paper between layers.

Notes

* It is better to use regular rolled oats when baking.  Quick or instant oats have been pre-cooked and absorb moisture faster, so whatever you are making may turn out dry or crumbly.
