Each year my sister includes something homemade in her Christmas gift to me. One year these Noel nuts arrived. I have now added them to my list of favourite Christmas treats. They are a good change from all the sweet treats around at Christmastime. BONUS – they are super easy to make!
This recipe is from “A Taste of Christmas” by Jacquie Schmit et al, Three Sisters Publishing 1998.
INGREDIENTS:
1 Egg white
1 tsp Cold water
4 cups Pecan halves
½ cup Granulated sugar
¼ tsp Salt
½ tsp Ground cinnamon
1/8 tsp Ground nutmeg
DIRECTIONS:
- Beat egg white and cold water until frothy.
- Add pecans and stir until well coated.
- Combine sugar, salt and seasonings.
- Add to pecan mixture and stir.
- Spread out on a buttered baking sheet.
- Bake at 225° F for one hour, stirring every 15 minutes.
- Cool completely.
- Store in an airtight container for up to three months.

These make a lovely gift. Simply fill a jar or a treat bag and decorate with a ribbon.
