Ranger Cookies

Ranger cookies are crispy chewy cookies packed with pantry ingredients. This recipe makes a big batch so they just might last a few days…

Makes 5 – 6 dozen.

Ingredients

  • 2 cups All-purpose flour
  • 1 tsp Baking soda
  • ½ tsp Baking powder
  • 1 tsp Salt
  • 2 cups Crisp rice cereal
  • 1 ½ cups Rolled oats
  • 1 cup Flake coconut
  • 1 cup Raisins chocolate chips or candy-coated peanut butter pieces
  • 1 cup Butter room temperature
  • 1 cup Granulated sugar
  • 1 cup Brown sugar packed
  • 2 Eggs
  • 2 tsp Vanilla

Instructions

  • Preheat oven to 375° F.
  • Combine flour, baking powder, baking soda and salt in a small bowl and set aside.
  • In a separate bowl, stir crisp rice cereal, oats, coconut and raisins together and set aside.
  • Using an electric stand mixer, cream butter and sugars together.
  • Beat in eggs, one at a time.
  • Add vanilla.
  • Reduce speed and add flour mixture ½ a cup at a time.
  • Stir cereal mixture into dough. Dough will be thick.
  • Roll into 1-inch balls or drop by teaspoon onto baking sheet.
  • Bake at 375° F for 12-14 minutes until golden brown.
  • Transfer to cooling rack and cool completely.
  • Store in an airtight container with parchment paper between layers.
