Ranger Cookies

Ingredients
- 2 cups All-purpose flour
- 1 tsp Baking soda
- ½ tsp Baking powder
- 1 tsp Salt
- 2 cups Crisp rice cereal
- 1 ½ cups Rolled oats
- 1 cup Flake coconut
- 1 cup Raisins chocolate chips or candy-coated peanut butter pieces
- 1 cup Butter room temperature
- 1 cup Granulated sugar
- 1 cup Brown sugar packed
- 2 Eggs
- 2 tsp Vanilla
Instructions
- Preheat oven to 375° F.
- Combine flour, baking powder, baking soda and salt in a small bowl and set aside.
- In a separate bowl, stir crisp rice cereal, oats, coconut and raisins together and set aside.
- Using an electric stand mixer, cream butter and sugars together.
- Beat in eggs, one at a time.
- Add vanilla.
- Reduce speed and add flour mixture ½ a cup at a time.
- Stir cereal mixture into dough. Dough will be thick.
- Roll into 1-inch balls or drop by teaspoon onto baking sheet.
- Bake at 375° F for 12-14 minutes until golden brown.
- Transfer to cooling rack and cool completely.
- Store in an airtight container with parchment paper between layers.
