Make this raspberry cordial for a delightful summer refreshment.

Servings: 8 cups

Ingredients

  • 4 cups Raspberries fresh or frozen
  • 1 ¼ cups Granulated sugar
  • 1-2 Lemons two lemons may overpower the raspberry flavour
  • 4 cups Boiling water

Instructions

  • In a large heavy saucepan, combine raspberries and sugar. Heat over medium heat and stir until sugar is dissolved and the flesh from the berries cooks off the seeds.
  • Pour the mixture through a strainer and discard the seeds.
  • Add the juice of one or two lemons and the boiling water. Stir.
  • Let cool and then refrigerate.
  • When chilled, serve over ice.
