Rhubarb Sauce

Rhubarb is a seasonal favorite. Enjoy it year round with Rhubarb Sauce Preserves in a Rhubarb Crisp, pie or simply on ice cream.

INGREDIENTS:

16 cups                      Rhubarb, washed and cut into ½ inch slices

4 cups                        Granulated sugar

1 cup                          Water

1 tsp                           Nutmeg

DIRECTIONS:

In a large, heavy saucepan stir all ingredients together.

Bring to a boil on medium high heat, stirring occasionally.

Reduce heat and simmer until softened to your desired texture.

Foam forms as the rhubarb cooks.

Skim off any foam that develops.

To store, you can process in a hot water bath as per your local preserving requirements. Alternatively, you can freeze.
