An Old-Fashioned Sugar Cookie
Sugar cookies are a love ’em or hate ’em kind of thing for me. It is very seldom I come across a sugar cookie I like, and then to make them? I’m not generally one to roll dough and cut out shapes and then decorate.
True to my “I just want simple” nature, this recipe appealed to me when I came across it in my Facebook newsfeed. I made these Silver Dollars the very next day and I love them!
INGREDIENTS:
1 cup Butter, softened
¾ cup Cooking oil
1 cup Granulated sugar
1 cup Confectioner’s sugar (powder or icing sugar)
1 tsp Vanilla
2 Eggs, one at a time
4 cups All purpose flour
1 tsp Baking soda
1 tsp Cream of tartar
DIRECTIONS:
Combine butter and cooking oil.
Add both sugars and vanilla. Mix until light and fluffy.
Add eggs one at a time, beating well after each egg.
Sift flour, baking soda and cream of tartar together and add to mixture. Mix well until dough comes together nicely.
Refrigerate for 1 hour or overnight.
Preheat oven to 375°F.
Roll dough into 1-inch balls and roll lightly in granulated sugar.
Place on cookie sheet about 3 inches apart. Press down with fork or bottom of glass.
Bake for 10-12 minutes.
Enjoy!
Yields about 6 dozen delicious cookies.
These freeze well in an airtight container, so they can be made ahead and ready for unexpected company.
