Smokies and Perogies

Frozen perogies and cooked smokies, or smoked sausages, make this an easy weekday meal the whole family will enjoy. Serves as many or as few as you like.

Ingredients

  • 1-2 per person Smokies
  • 1 Medium onion diced
  • 1 Red bell pepper sliced
  • 1 Green bell pepper sliced
  • 1 cup Your favourite BBQ sauce
  • 3-5 per person Perogies frozen, any flavour

Instructions

Smokies

  • Preheat oven to 400°F.
  • Preheat oven proof skillet on stovetop.
  • Place smokies in hot skillet and transfer to oven. Bake until fat is rendered, about 20 minutes.
  • Meanwhile, prepare vegetables.
  • When smokies are cooked, slice into 1/2-inch pieces.
  • Drain grease from the skillet and wipe with a paper towel.
  • Sauté the vegetables in skillet for a few minutes.
  • Add sliced smokies and BBQ sauce to the skillet and stir.
  • Return to the oven to heat through while you make the perogies.

Perogies

  • Fill large pot half full of water. Add a teaspoon of salt. Bring to a full boil.
  • Add perogies to the boiling water.
  • When the water returns to a boil, boil perogies for three minutes or until they float to the top.
  • Drain and serve with butter and sour cream.
  • Variation – Heat butter in a skillet on the stovetop. Fry the cooked perogies until browned on each side.

Notes

Complete the meal with a garden salad or sliced vegetables.
