Spanish Rice

Spanish Rice

A weekday meal that is easy to prepare, Spanish rice is a favourite way to use leftover ham. Use your enamel cast iron pot for a one-pot meal.

Serves 4-6.

INGREDIENTS:

1 cup                          Long grain rice

1 cup                          Water

1 can (28 oz)              Stewed tomatoes

1 ½ cups                    Cooked ham, diced

1                                  Medium onion, diced

½                                 Green bell pepper, diced

½                                 Red bell pepper, diced

1 tsp                           Chilli powder

½ tsp                          Cumin

½ tsp                          Salt

¼ tsp                          Ground pepper

dash                           Cayenne pepper, for some heat (optional)

DIRECTIONS:

  • Put rice in a heavy saucepan or your cast iron pot.  Rinse with cold water and drain a couple of times to remove the starch dust.  Then add 1 cup water and bring to a boil.  Stir, cover and reduce heat to low.  Allow it to cook while preparing remaining ingredients (about 10 minutes)
  • If using a cast iron pot, add remaining ingredients to rice as they are prepared.  Otherwise, add remaining ingredients to a lightly greased casserole dish, then add the rice and stir to combine.
  • Cover and bake in 350° F oven for about an hour or until rice is cooked.
  • Serve with a side of cream corn and a garden salad.
