Spiced Applesauce Cake

A visit to the apple orchard is an annual autumn activity. When I get home with all the apples, I make applesauce to use in recipes and as a side dish with many meals.

This cake is super moist and full of cozy, old-fashioned flavours. The brown sugar glaze adds the perfect amount of sweetness. Or you can omit the glaze and serve with brown sugar sauce.

Equipment

  • 1 Bundt pan or 9×9 glass baking dish
  • 1 Electric mixer

Ingredients

Cake

  • 1 cup Raisins
  • 1 cup Granulated sugar
  • ¾ cup Butter melted
  • 2 Eggs
  • 1 ½ cups Applesauce plain
  • 1/3 cup Fancy molasses
  • 2 cups All-purpose flour
  • 1 tsp Baking soda
  • ½ tsp Baking powder
  • ¼ tsp Salt
  • 1 tsp Ground cinnamon
  • ½ tsp Ground nutmeg
  • ¼ tsp Ground cloves
  • ½ cup Chopped nuts preferably walnuts

Glaze

  • ½ cup Brown sugar
  • ¼ cup Milk
  • 3 tbsp Butter softened
  • 1 ¼ cup Icing sugar

Instructions

Cake

  • Preheat oven to 350° F.
  • Grease 9-inch pan or a Bundt pan.
  • Put raisins in small saucepan and cover with water. Bring to a boil and let simmer for a few minutes.
  • In a medium bowl, sift dry ingredients together and set aside.
  • In a large mixing bowl, beat butter and sugar together. I use my stand mixer.
  • Beat in eggs, one at a time.
  • Add applesauce and molasses and mix until well combined.
  • Stir in dry ingredients to moisten.
  • Drain raisins.
  • Stir in raisins and nuts.
  • Pour evenly into prepared pan.
  • Bake at 350° F for 45-50 minutes. Check doneness by inserting a toothpick into the center of the cake. Toothpick should come out clean. Be sure not to overbake.
  • Allow to cool for 10-15 minutes before turning out onto a cooling rack.
  • Add the glaze while the cake is slightly warm.

Glaze

  • In a medium saucepan, combine brown sugar, milk and butter and bring to a boil. Boil for one minute and remove from heat.
  • Add icing sugar and beat with an electric hand mixer. Adjust to the right consistency by adding more icing sugar, one tablespoon at a time, as needed.
  • Spread on the cake while it is still slightly warm.
