Sweet and Sour Chicken

This is the nicest sweet and sour chicken recipe I’ve ever made.  A good, balanced flavour. Serve over rice or noodles with a vegetable stir-fry. Make in the slow cooker for an easy weekday meal.

Serves 6.

INGREDIENTS:

2 tbsp                        Ketchup

1 cup                          Water

½ cup                         White vinegar

1 tbsp                        Soy sauce

¾  cup                        Brown sugar

1 ½ lb                         Boneless, skinless chicken breasts or thighs, cut into 1-inch pieces

2 tbsp                        Cornstarch

2 tbsp                        Cold water

1 cup                          Pineapple tidbits, canned

½                                 Large green pepper, diced

DIRECTIONS:

  • Combine first five ingredients in slow cooker.
  • Add chicken and stir together.
  • Cover and cook on low for 6-8 hours.
  • One hour before serving, combine cornstarch and water in measuring cup and stir so there are no lumps.  Add to slow cooker and stir. 
  • Add pineapple and green pepper to slow cooker and stir to combine. 
  • Continue cooking until sauce is thickened.
