Sweet potato fries are high in heart healthy fibre and are a delicious substitute for regular fries.

Equipment
- 1 baking sheet
Ingredients
- 2 lbs Sweet potatoes
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 tbsp Seasoning of choice – garlic powder paprika, black pepper
- 1-2 tbsp Cornstarch
Instructions
- Preheat oven to 400°F.
- Peel sweet potatoes and cut into fries, trying to make the pieces similar sizes. The thicker the pieces, the longer the cooking time.
- Place in a medium bowl and toss with olive oil.
- A sifter helps coat the fries with the cornstarch mixture evenly. Julia Stewart photo.
- Sprinkle with salt and stir.
- Combine seasoning and cornstarch in a small bowl and transfer to a sifter and sift over fries. Stir to coat fries well.
- Transfer to a baking sheet lined with parchment paper making sure the fries don’t overlap too much.
- Bake 20-25 minutes at 400° F, turning after 15 minutes. Keep an eye on these as they can go from crispy to burned quickly. Sweet potato fries are never as crispy as regular fries. These get crispier when cooked in a toaster-oven style air fryer.
- Serve with a spicy mayo or chipotle sauce.
