Use your leftover chilli in a taco salad – a quick and healthy weekday meal. I like to serve up individual salads for each person.
INGREDIENTS (amounts are determined by your personal preference):
- Iceberg lettuce, shredded
- Green onion or red onion, chopped
- Tomatoes, dice
- Cheddar cheese or Monterey Jack cheese, shredded
- Tortilla chips, broken up
- Chilli con carne
- Sour cream
- Salsa (optional)
- Guacamole (optional)
DIRECTIONS:
- Reheat chilli in pot in stove top.
Prepare vegetables and cheese.
Layer ingredients on a dinner plate as listed – lettuce, onion, tomato, cheese, tortilla chips, chilli, cheese, toppings (sour cream, salsa, guacamole).
