Taco Salad

Taco salad. A bed of lettuce topped with tortilla chips, chili and cheese

Use your leftover chilli in a taco salad – a quick and healthy weekday meal. I like to serve up individual salads for each person.

INGREDIENTS (amounts are determined by your personal preference):

  • Iceberg lettuce, shredded
  • Green onion or red onion, chopped
  • Tomatoes, dice
  • Cheddar cheese or Monterey Jack cheese, shredded
  • Tortilla chips, broken up
  • Chilli con carne
  • Sour cream
  • Salsa (optional)
  • Guacamole (optional)

DIRECTIONS:

  • Reheat chilli in pot in stove top.
Let chili simmer for 1 1/2 hours.

Prepare vegetables and cheese.

Layer ingredients on a dinner plate as listed – lettuce, onion, tomato, cheese, tortilla chips, chilli, cheese, toppings (sour cream, salsa, guacamole).
