This shepherd’s pie is a great combination of wholesome goodness with the fun of tater tots. It comes together in one hour so is good for a weekday meal.

Equipment

  • 1 12" oven-proof skillet for a one dish meal
  • 1 9×13 glass baking dish if you don't have an oven-proof skillet

Ingredients

  • 2 tsp Vegetable oil
  • 1 lb Lean ground beef
  • 1 Medium onion diced
  • ½ Green bell pepper diced
  • 2 Garlic cloves chopped
  • 2 tsp Chilli powder
  • 1 tbsp Italian seasoning
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 1 ½ cups Frozen vegetable medley peas, corn, carrots*
  • 1 19-oz can Diced tomatoes
  • 1 bag Frozen Tater tots
  • 1 cup Shredded cheese optional

Instructions

  • Preheat oven to 400°F.
  • Heat 12-inch oven proof skillet on stove top at medium-high.**
  • Add vegetable oil and spread around.
  • Brown ground beef until no pink is showing. Drain off fat and remove meat from pan.
  • In the same pan, sauté onions for 3 minutes. Add garlic and green pepper and cook another minute.
  • Add remaining ingredients including the cooked ground beef, but not the tater tots, and stir.
  • Level the mixture in the pan.
  • Lay tater tots on top in a single layer.
  • Cook at 400°F for 45 minutes.
  • Remove from the oven and sprinkle with shredded cheese, if desired. Return to the oven until melted.

Notes

* If you don’t have the frozen vegetable medley on hand, just use ½ cup each of peas, corn and carrots.
** If you don’t have an oven proof skillet, this recipe can also be cooked in a greased 9×13 baking dish.
