This melt-in-your-mouth shortbread is by far the best I have ever had! The secret? Whip the cookie dough for 10-20 minutes with an electric mixer.
INGREDIENTS:
2 cups Butter, softened
1 cup Confectioners (icing or powdered) sugar
3 cups All-purpose flour
3/4 cup Cornstarch
DIRECTIONS:
- Using an electric mixer, cream butter in a large bowl.
- Beat in icing sugar 1/4 cup at a time
- Beat in flour and cornstarch 1/2 cup at a time.
- Continue beating for 10-20 minutes.
- Drop by teaspoonfuls or cookie press onto ungreased cookie sheet.
- Add a piece of candied cherry for garnish, or you can pretty them up with some butter icing and sprinkles once cooled.
- Bake at 300° F for 25 minutes. You don’t want them to turn brown around the edges.
