(Mom's) Beef Stew
A classic beef stew loaded with root vegetables and fork tender meat.

- 1-2 pounds Stewing beef or boneless chuck tip or round cut into 1-inch cubes
- 1 Medium onion diced, (1 cup)
- 2 Medium potatoes cut in to 1/2 -inch pieces (2 cups)
- 4 Carrots sliced ¼-inch pieces (2 cups)
- 1 Turnip cut into ½-inch pieces (2 cups)
- 2 Celery stalks sliced (1 cup)
- 1 Green bell pepper diced
- 1 tsp Salt
- ½ tsp Pepper
- 1 tbsp Parsley
- 2 Bay leaves
- Water to just cover
- ¼ cup Barley
- 1 tbsp Cornstarch
- ¼ cup Cold water
Place meat, vegetables and seasonings in a large slow cooker. Add enough water to cover the ingredients.
Cover and cook in the slow cooker on low for eight hours.
A half hour before serving, add barley. Mix cornstarch with second amount of water and stir into stew.
Cover with lid and continue cooking until slightly thickened and barley is tender.
Serve with a dinner roll or biscuit.
