Raspberry Cordial
Don't you just love bright red drinks? Make this raspberry cordial for a delightful summer refreshment.
Servings: 8 cups

- 4 cups Raspberries fresh or frozen
- 1 ¼ cups Granulated sugar
- 1-2 Lemons two lemons may overpower the raspberry flavour
- 4 cups Boiling water
In a large heavy saucepan, combine raspberries and sugar. Heat over medium heat and stir until sugar is dissolved and the flesh from the berries cooks off the seeds.
Pour the mixture through a strainer and discard the seeds.
Add the juice of one or two lemons and the boiling water. Stir.
Let cool and then refrigerate.
When chilled, serve over ice.
